This coconut blackberry mojito is perfect for a hot summer day! It is made with just 5 simple ingredients- mint, lime club soda, blackberries, coconut milk, and rum. It is a great low calorie drink and a delicious way to get some extra berries into your day.

This drink has been my all time favorite drink this summertime. It is extremely low calorie and it leaves you feeling light and refreshed. I will warn you these can be dangerous. I learned the hard way! haha. The blackberries and coconut milk suck up a lot of the rum, so it is not too harsh on the rum taste. For this picture I put it in a normal size cocktail glass, but I do think this drink is better suited for a tall glass. If you would like this drink thicker and creamier, feel free to keep it in a short glass. I preferred it in a tall glass with a little extra club soda.
You can use either frozen or refrigerated blackberries. If you do use frozen blackberries, it could cause the drink to be a little thicker and more of a frozen drink feel. Feel free to you any type of coconut milk you would like! Whether it is unsweetened, sweetened, vanilla, original, ect, I think that would all be delicious! I hope you enjoy this recipe!
