Garlic Butter Pork Chops with Mushroom Gravy
This dinner is ridiculously easy and quick to make with just a few ingredients! This meal is BOTH gluten free and dairy free. These garlic pork chops are seared and then simmered in a creamy mushroom gravy. It is the perfect meal for a cold winter evening. Serve these pork chops over mashed potatoes, cauliflower rice or pasta!

Pork Chops
- 4 pork chops bone-in or boneless
- 1 tsp garlic powder
- 1 tsp thyme
- 1 tsp oregano
- 1 tsp onion powder
- salt & pepper to taste
- 2 tbsp olive oil
Mushroom Gravy
- 2 cup cremini mushrooms sliced
- 1 can coconut milk canned
- 1 cup chicken broth gluten free & dairy free
- 5 garlic cloves minced
- 3 tbsp butter or ghee dairy free
Combine garlic powder, thyme, oregano, onion powder and salt & pepper in a small bowl.
Pat the pork chops dry with a paper towel. Then season generously with the seasoning mixture. Heat olive oil in a skillet over medium heat.
Sear the pork chops for about 4-5 minutes per side until browned on both sides. Once cooked, place on a plate and set aside.
In the same skillet, add the mushrooms and cook mushrooms down until golden brown.
Add chicken broth, garlic cloves and butter and mix well. Then, add coconut milk and mix until well combined. Allow the gravy to simmer for 5-6 minutes until slightly thickened and adjust seasoning if needed.
Transfer pork chops into skillet with gravy and allow to simmer for about 3 more minutes. Ensure that pork chops are cooked through (145°F). Serve immediately with mashed potatoes, califlower rice, or pasta.
