Avocado Buffalo Chicken Wrap

One of my all time favorite meals. This buffalo chicken wrap consists of juicy shredded buffalo chicken, lightly fried avocados, ranch, queso and blue cheese. It is the perfect lunch or dinner for buffalo chicken lovers!

Ingredients

  • 2 cups shredded chicken

Buffalo Sauce

  • cup Frank's RedHot
  • 2 tbsp Louisiana Hot Sauce
  • ¼ cup butter or ghee

Avocado Fries

  • 1 avocado sliced
  • ¼ cup gluten free all purpose flour
  • 1 tbsp chili powder
  • ½ tsp salt
  • 1 egg beaten
  • 1 cup gluten free panko breadcrumbs
  • 1 tbsp avocado oil

Wrap

  • ½ cup blue cheese crumbles
  • ½ cup queso
  • ¼ cup ranch
  • 2 tortilla wraps gluten free

Instructions

Buffalo Sauce

  • Over low heat, add Frank's RedHot, Louisiana Hot Sauce, and vegan butter until warm.

Avocado Fries

  • In three seperate bowls, have one bowl with the flour, chili powder and salt mixed together. Have the eggs in the second bowl and the third bowl will be the panko breadcrumbs.
  • Dredge each avocado slice in the flour mixture, then dip into the egg mixture and then roll the avocado in the panko breadcrumbs. Repeat with remaining avocado slices.
  • Heat the oil in a large pan over medium-high heat. Add avocados in a single layer to the pan. Cook for about 3 minutes per side until golden brown. Once avocados are done, drain on a paper towel.
  • Repeat with the remaining avocado slices.
  • Sprinkle with extra salt if desired.

Wrap

  • In a bowl mix shredded chicken and buffalo sauce until well combined.
  • To assemble, cut down from the center of the tortilla to the edge. On the bottom left corner spread out half of the ranch evenly. In the upper left corner put about 3-4 avocado slices together. In the upper right corner spread out half of the blue cheese and queso evenly. In the last bottom right corner, spread 1 cup of buffalo chicken out evenly. Fold the ranch over the avocados, then the avocados & ranch over the cheese, and then folding over the buffalo chicken.
  • Heat a drizzle of olive oil in a skillet, add one wrap at a time and cook 3-4 minutes per side until golden brown.
