Avocado toast has been my go-to breakfast for over 6 months now. I am not a picky eater, but I am particular with breakfast. Breakfast really is the most important meal of the day, because it sets the foundation for the day! I barely eat eggs (I went completely vegan for 60 days and now I do not care for eggs.. I used to have two eggs every single day before that), I do not like a lot of processed meats like bacon and sausage (thanks to being mostly vegan.. again), and I do not like to eat a lot of sugar and sweets in the morning like pancakes/ waffles with syrup. Thus, this narrows down my breakfast options. That is why I have mastered avocado toast.
My breakfast typically consists of my green Power Shake smoothie with a banana, a black cold brew coffee, and one of my avocado toast recipes. This breakfast is a powerful trio and it leaves me feeling satisfied and refreshed. I hit the gym right after I eat and I have been having amazing workouts with this breakfast.

For this mushroom avocado toast recipe I used just regular whole wheat bread, but feel free to use your favorite type of bread. I use the balsamic glaze from Trader Joes, I am pretty sure that most local grocery stores have some type of balsamic glaze. Lastly, the everything but the bagel sesame seasoning blend is one of my favorite staple items I always get from Trader Joes. I am not sure if any other grocery store has a seasoning like that, but let me know if there is! I am moving in August to a neighborhood that doesn’t have a Trader Joes nearby and I am freaking out!

Balsamic Glazed Mushroom Avocado Toast
Ingredients
- 2 pieces of toast
- 1 avocado mashed
- 3 portobella mushrooms sliced
- balsamic glaze
- everything but the bagel sesame seasoning blend
- salt
Instructions
- Toast bread to liking.
- Mash avocado and spread evenly on toast.
- In a saucepan over low medium heat, cook mushrooms, balsamic glaze, seasame seasoning blend, and salt.
- Cook mushrooms about 1-2 minutes or until they are soft and coated in glaze.
- Add mushrooms on top of toast and drizzle glaze for serving.
- Serve immediately.
