ingredients.
- 1 pound linguini noodles
- 3 tbsp olive oil
- 1 pound large shrimp peeled & deveined
- salt and black pepper
- 3 cups white mushrooms
- 6 garlic cloves minced
- 1 cup coconut cream canned
- ½ cup dry white wine such as Pinot Grigio
- 2 lemon freshly squeezed
- 3 tbsp salted butter
- ¼ cup fresh parsley chopped
- 1 tbsp cajun seasoning
- 1 pinch crushed red pepper flakes
- Parmesan cheese for topping
instructions.
- Bring a large pot of salted water to a boil. Cook pasta according to package directions.
- Heat olive oil in a large skillet over medium-high heat. Season shrimp with salt and pepper. When the oil shimmers add the shrimp and sear on both sides for about 1-2 minutes. Remove the shrimp.
- In the same skillet over low to medium heat, add coconut cream, white wine, butter, mushrooms, garlic, freshly squeezed lemon, and cajun seasoning heat until it comes to a boil. Once it boils, reduce the heat to low and add shrimp and pasta, tossing to combine.
- Stir in parsley, red pepper flakes, and parmesan cheese for topping.
