- 8-10 eggs hard boiled
- 2 ripe avocados
- 1/4 cup red onion finely chopped
- 1 jalapeno finely chopped & seeded
- 2 freshly squeezed lime
- 3 tbsp cilantro chopped
- ¼-½ tsp salt
instructions.
- Boil eggs for about 15 minutes and then soak in an ice bath for 10 minutes.
- In a bowl, mix together avocados, red onion, jalapeno, lime, cilantro, and salt.
- Peel and cut an egg in half and add a tbsp of guacamole on each side.
- Top with chili lime seasoning and cilantro.
