Here is a quick and easy pad Thai recipe. This pad Thai is incredible. It is tangy, with a little bit of spice, and a touch a salt from the soy sauce. I love shrimp with pad Thai as it helps keep the meal light, but get a great source of protein.
I thought there would be no better way to start the week than an easy-to-make Thai dish. Thai is one of my all-time favorite cuisines. There are endless varieties of recipes and most of the recipes are packed with flavor. Thailand is #1 on my bucket list and it is the first place I want to visit wants all the restrictions are lifted. I am so intrigued with the culture of Thailand and it looks absolutely beautiful. Anyways, again what I say with most of my meals apply! You can have fun with this. You can make it vegetarian and takeaway the shrimp. If you do not like shrimp, you can make this with chicken instead. Feel free to add peanuts, honey, or whatever your heart desires!

- 8 oz pad thai noodles
- 6 tbsp soy sauce low sodium
- 3 tbsp fish sauce
- 2 tbsp rice vinegar
- 4 tbsp sweet chili sauce
- ⅓-1 tsp chili flakes
- 1 lbs raw jumbo shrimp peeled & deveined
- 2 tbsp olive oil
- 4 tbsp butter
- 6-7 cloves garlic minced
- 1 jalapeno chopped & seeded
- ¼ cup red onion chopped
- ¼ cup parsley chopped
- 3 tbsp green onion chopped
- parsley, lime, and/ or sesame seeds for serving
instructions.
- Cook the pad thai noodles according to packaged directions.
- To make the sauce. In a medium-sized bowl, combine soy sauce, fish sauce, rice vinegar, sweet chili sauce, and chili flakes.
- Heat the olive oil, butter, garlic, jalapeno, red onion, parsley, and green onions over medium heat. When the mixture starts to boil, add the shrimp and sear on both sides until pink, 2-3 minutes. Remove shrimp from heat and set aside.
- Mix leftover sauce from shrimp into a medium-sized bowl of sauce.
- Add the noodles, shrimp, and sauce, tossing to combine.
- Divide the noodles and shrimp between plates. Top with parsley, lime, sesame seeds, and/or chili flakes.
