This spinach strawberry avocado salad is my favorite salad, especially in the summertime! It is a flavorful, refreshing salad with spinach, avocado, cucumber, feta, cashews, and chicken. It is then drizzled with my yogurt ranch dressing. A great summer treat!

For this recipe, I made it with my Greek Yogurt Ranch dressing which paired great together, but using a vinaigrette-based dressing would taste great too. Here is the link if you would like to make this salad with my Greek Yogurt Ranch.
I love this salad for the summertime because it is a great meal that will keep you feeling light, but satisfied. I love the combination of strawberries and avocados because you get the creaminess of the avocado and then flavor of the juicy, sweet strawberries. You can use whatever berries you like for this recipe, blueberries or blackberries would taste great too!
ingredients.
- 2 cups spinach
- ½ avocado sliced
- 3 strawberries sliced
- ¼ cucumber sliced
- ¼ cup feta crumbles
- 1 tbsp cashews sliced
- 1 chicken breast sliced
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tbsp olive oil
instructions.
- Season chicken breast with salt, pepper, garlic powder, and onion powder.
- Over medium heat, heat olive oil until shimmering, and cook chicken until tender (about 10 minutes). Slice chicken once cooked.
- On a plate, add the spinach, avocado, strawberries, cucumbers, feta crumbles, cashews, and chicken.
- Add your favorite dressing. For this recipe, I used my yogurt dressing (listed on my website) and it was a fantastic duo.

You could also make this salad with salmon, tuna, or just about any kind of seafood. You can also keep it vegetarian by not adding chicken. There is not a lot of ways to mess up this salad, so have fun with it!
