Coconut Blackberry Mojito

This mojito is perfect for a hot summer day! It is made with just 5 simple ingredients- mint, lime club soda, blackberries, coconut milk, and rum. It is a great low calorie drink and a delicious way to get some extra berries into your day.

Ingredients

  • 5 blackberries
  • ΒΌ cup coconut milk
  • 6 oz club soda lime
  • 2 oz rum
  • 1 cup ice
  • mint for garnish

Instructions

  • In a blender, blend blackberries & coconut milk until well combined.
  • In a glass, pour half of the mixture in and then add gin, club soda, and ice.
  • Add mint for the garnish.
