Coconut Blackberry Mojito
This mojito is perfect for a hot summer day! It is made with just 5 simple ingredients- mint, lime club soda, blackberries, coconut milk, and rum. It is a great low calorie drink and a delicious way to get some extra berries into your day.

- 5 blackberries
- ΒΌ cup coconut milk
- 6 oz club soda lime
- 2 oz rum
- 1 cup ice
- mint for garnish
In a blender, blend blackberries & coconut milk until well combined.
In a glass, pour half of the mixture in and then add gin, club soda, and ice.
Add mint for the garnish.
