Happy Sunday everyone! Sunday is my meal prep and grocery shopping day. I take the day to plan out all my recipes, grocery shop and meal prep! I typically meal prep lunch and breakfast for the week. I have a very busy work schedule so meal prepping saves me from eating out or not eating at all. I meal prepped this avocado tuna wrap last week and they were the PERFECT lunch. They left me feeling full and satisfied, but it did not weigh me down the rest of the day. These took me less than 10 minutes to make, wrapped them in tin foil and I was good to go! You can make them with either mashed avocado or guacamole. Here is my guacamole recipe, but feel free to use store bought to your own recipe! ingredients.
- solid white albacore tuna in water well drained
- greek yogurt
- cucumber diced
- red onion diced
- lemon juice
- fresh parsley chopped
- garlic minced
- dijon mustard
- chili powder
- salt & pepper to taste
- spinach
- guacamole or mashed avocado
- tortillas
instructions
- In a bowl, combine tuna, yogurt, cucumber, red onion, lemon juice, parlsey, garlic, dijon mustard, chili powder and salt & pepper.
- In each tortilla add tuna, avocado or guacamole and spinach.
- Roll up each tortilla, tucking in the ends as you go.
- Enjoy immediately after. Feel free to add hot sauce or ranch for some extra flavor.

- 3 5 oz solid white albacore tuna in water well drained
- ¾ cup greek yogurt
- ⅓ cup cucumber diced
- ⅓ cup red onion diced
- 2 tbsp lemon juice
- 2 tbsp fresh parsley chopped
- 1 tsp garlic minced
- 1 tsp dijon mustard
- ½ tsp chili powder
- salt & pepper to taste
- 1 cup spinach
- 4 servings guacamole or mashed avocado
- 4 8 in tortillas
Instructions
