These vegan black bean burritos are ridiculously easy to make. They are great for breakfast, lunch, or dinner and also a great meal for on the go! They are stuffed with black beans, corn, rice, guacamole, salsa, and queso and make for a great, comfort and nutrient-dense meal.

I thought this would be a great recipe to make because who doesn’t like burritos? This meal is beginner-friendly and is a great meal prep option. You can make these vegan black bean burritos in under 20 minutes, in just six easy steps! This recipe is the perfect meal prep! I meal prepped these burritos for lunch and it was incredibly easy. I individually wrapped the burritos and tin foil and kept them in the refrigerator. Feel free to have a little fun with this recipe. If you want to add or take away any ingredients feel free to! This is the perfect meal to freestyle.
Let’s talk about some of these ingredients for these vegan black bean burritos..
Salsa: I used a fresh mild salsa from Whole Foods, but you can use whatever salsa you would like. If you like pico de Gallo feel free to use that instead! I was originally going to do this recipe with pico, but the fresh pico de Gallo at Whole Foods was too expensive for me and I was too lazy to make my own…. (I was having one of those days).
Vegan Queso: I used Siete Cashew Queso Mild Nacho from Whole Foods for this recipe. The Siete Vegan Queso is one of my favorite store-bought queso. I could of made my own, but you know… what I said before. My goal for this recipe was quick and simple.
Guacamole: You all will learn quickly that I have an obsession with guacamole. I use it in a lot of my recipes. If you are in a hurry feel free to just use mashed avocado (that will still do the trick).
Corn: I used Trader Joe’s Frozen Fire Roasted Sweet Corn. Feel free to use fresh, frozen, or canned corn.
ingredients.
- 1 can black beans drained
- 1 cup frozen fire roasted corn
- 1/2 cup vegan queso
- 1 cup white rice
- 4 gluten free tortillas
- 1/2 cup salsa
guacamole.
- 2 avocados mashed
- 1 jalapeno finely chopped
- 1/4 cup red onion finely chopped
- 2 tbsp cilantro chopped
- 1 lime squeezed
instructions.
- Cook rice according to package.
- Add black beans and corn into a skillet over medium heat for 10 minutes or until corn is no longer frozen.
- Mix together avocados, jalapeno, red onion, cilantro, and lime in a bowl and set aside.
- Over medium heat, heat gluten-free tortillas until warm on each side.
- Split rice, bean/ corn mix, guacamole, salsa, and queso into quarters and add one-quarter of the ingredients to each tortilla.
- Wrap tortilla into a burrito.

Add all these ingredients into the tortilla in straight lines so it is easier to wrap! Make sure you get your tortilla warm and wrap it right away. This way it is easier and doesn’t tear the tortilla. I wrapped my leftovers in tin foil and heated them over low/ medium heat in a skillet. I hope you all enjoy these vegan black bean burritos!
