Fails after fails, and some more fails, I have finally come up with the best vegan and gluten-free chocolate chip cookies! I have been eating plant-based for the last three months, so vegan cooking is very new to me (and intimidating!). You would never guess these cookies were vegan and gluten-free. To be honest, these may be my new go-to chocolate chip cookie recipe.
I think the biggest helpful tip I have is if you have a mixer, use it! This dough can be a little tough in the beginning to really get it mixed so if you have a mixer make sure you use it. This will ensure your dough gets the right consistency. If your dough seems a little too dry, I would add a little more coconut oil. If your moisture seems too wet, I would add a little more flour.

- 8 tbsp vegan butter softened
- ⅓ cup coconut oil melted
- ½ cup cane sugar
- ⅔ cup brown sugar packed
- 1 tsp vanilla extract
- 1½ cup gluten-free all purpose flour
- 1 tsp baking soda
- ¼ tsp salt
- 1⅔ cup chocolate chips vegan
instructions.
- Position the rack in the center of the oven and preheat the oven to 350° degrees F.
- Line two baking sheets with parchment paper.
- In a small bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, mix together coconut oil, butter, cane sugar, brown sugar, and vanilla.
- Add the dry ingredients and mix them together. Add chocolate chips and mix evenly throughout.
- Use a 2 tablespoon cookie dough scoop to portion the cookie dough into balls and place them about 3 inches apart.
- Cook the cookies for 10-12 minutes. This type of cookie may not look like the typical “golden” cookie so do not rely on the color of the cookie as to when you can pull them out.
- Top with flaky salt.
