This recipe can not be any more simple, delicious, and easy to make. You truly can’t go wrong with fajitas! I made this with my traditional guacamole recipe and also my vegan queso. I will link the guacamole recipe below and the queso is still in the making so stay tuned.
I hope everyone is having a good week! I honestly have had better weeks. I am usually an upbeat & positive person, but this week I am a little down. I am in Macronutrients this summer for my degree and it is kicking my ass. I have a 4.0 GPA in my Human Nutrition & Dietetics so far (I am 20 credit hours away from graduating). I have a C in this class and barely holding on, it is intense. It is a lot of information to fit into five weeks.
I also got my furlough warning from the airlines I work for. It is no surprise but seeing it written and sent out to the employees that are going to be affected hits differently. I know I will get my job back eventually, but I am still saddened by losing my job for the time being. I love my job so much and it has brought me an enormous amount of happiness to my life. I will miss my flying family, but we will be back in the skies eventually! Thank you for reading this and letting me vent. I love the little community I am building through my website.

ingredients.
- 1½ pound boneless chicken breasts cut into strips
- 1 orange pepper sliced
- 1 yellow pepper sliced
- 1 red pepper sliced
- ½ sweet onion sliced
- 1 jalapeno
- 10-12 flour tortillas warmed
- 1 can black beans
- 2 lime freshly squeezed, for serving
- ⅓ cilantro chopped, for serving
- 1 tbsp olive oil
seasoning for chicken.
- 1 tbsp chili powder
- 2 tsp paprika
- 1 tsp cayenne red pepper
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tsp salt & pepper
- 2 tbsp olive oil
instructions.
- Preheat the oven to 400 degrees F.
- On one baking sheet, toss together the chicken, chili powder, paprika, cayenne red pepper, onion powder, garlic powder, cumin, salt, pepper, and olive oil.
- On another baking sheet, add pepper, onions, and 1 tbsp of olive oil. Season with salt and pepper and toss to combine. Transfer both baking sheets to the oven and bake between 20-25 minutes or until chicken is cooked through and peppers are slightly charred.
- Remove from the oven and divide the black beans into warmed tortillas. Top with chicken, peppers/ onions, cilantro, and lime. Feel free to add salsa, queso, guacamole, or cheese!
