These chicken gyros with tzatziki sauce are marinated chicken topped with tzatziki sauce, greek salad, feta, and then wrapped in warm pita bread. It is an awesome summer night meal and can be made in under 30 minutes.
Happy Monday & I am sorry that this post took way too long to publish. My life has been out of control lately. Just to give you a life update… I currently *technically* have four jobs. I am still working as a flight attendant, an EMT in the Emergency Department at the Children’s Hospital, a brand partner with Purium, and now I am cross-training at the hospital to be a Behavioral Health Specialist in the Psych unit in the ED. Life has been crazy!!
On top of work, I start school in a week (I am taking 18 credit hours…. pray for me) so I have been getting ready for school to start again. Lastly, I am moving in with my boyfriend in south Denver in two and a half weeks. I am so excited to move, I am in love with our new place and I am really stoked to move in with Mattson. It is a huge move for us, but we are so excited. I am sorry for being inconsistent with social media and I hope this gives you a little explanation… but I have really been extremely busy.

Anyways… enough with my life here is a great, easy to make, but more importantly delicious recipe! You really cannot go wrong with chicken gyros and these gyros are amazing, especially for being chicken! It does not take much time at all to make and they are extremely simple to make. I made this last minute and it turned out great. You can make your own homemade Tzatziki sauce, but I was honestly in a rush and I bought store-bought sauce. ingredients.
- 2 pieces chicken breast sliced
- 3 tbsp honey
- 3 tbsp olive oil
- 1 tbsp fresh dill
- 2 garlic cloves minced
- 1 tsp parsley
- 1 tsp garlic powder
- 1 tsp lemon pepper
- pinch of salt
- ½ cucumber chopped
- ½ roma tomato chopped
- ½ cup spinach chopped
- ½ cup red onion
- ¼ cup feta cheese
- ½ cup Tzatziki sauce
- 2 pita breads
instructions.
- Place chicken, honey, olive oil (2tbsp) , fresh dill, garlic, parsley, lemon pepper, and salt in a bag and let marinate for at least 30 minutes.
- For the greek salad, toss together sliced tomatoes, cucumber, red onion and spinach.
- On a skillet over medium heat (add about 1 tbsp of olive oil), cook chicken breasts for about 5-8 minutes on each side or until chicken are fully cooked.
- Place sliced chicken, greek salad, feta cheese and tzatziki sauce on top of a warm pita bread.
