I know what you are thinking to yourself, these look nothing like sweet potato fries. Well, I am here to introduce to you baked WHITE SWEET POTATO FRIES. Seriously, why have I never heard of these before?! For the last 24 years of existence, I never knew there was such a thing as white sweet potatoes. I came across them in the grocery store and I thought I would give them a try. Let me tell you they did not disappoint!
Imagine a cross between Russet/ Idaho potatoes and orange sweet potatoes. The inside of the white sweet potato has the consistency of a sweet potato, but the flavor of a regular Russet/ Idaho potato. These baked white sweet potato make for delicious French fries!
Of course, for this recipe, you can use any type of potato, but I highly recommend giving the white sweet potato a try. You are in for an awesome surprise!

Soaking the cut potatoes is extremely important because this removes excess starch and rinses excess sugars. This will help you get crispier and tender oven baked French fries. Stick to unsalted water for soaking. Using salt water will pull the moisture from inside the potato and pull it out.
Be generous with the olive oil. For my recipe I only needed about 3 tbsp of olive oil, but use more if you feel like your potatoes need some more love. Using enough olive oil will ensure that your potatoes will turn out crispy and not dried out (this will absolutely ruin the fries if you do not use enough oil).
Season, season, and season some more! This is what brings out the flavor of the potatoes and keeps it from being bland. My recipe is just a few of my favorite seasonings, but feel free to add whatever seasonings you enjoy. If you love chili powder, add it! If you love oregano, add it! There is no such thing as the French fry police and it is pretty hard to mess up seasoning for French fries! (Seriously, have fun with this part just be careful not to add too much).

- Transfer potatoes on a baking sheet, leaving some space between fries.
- Bake for 15 minutes and then flip the fries. Bake for another 10 minutes until they are golden on the outside and tender on the inside.
